INGREDIENTS

  • Chicken: 6 Oz (shredded)
  • Celery stalks: 3
  • Olive oil: 40 ml
  • Bell pepper (red): 1
  • Garlic (minced): 1 teaspoon
  • Chicken broth: 200 ml
  • Tomatoes (diced): 1 cup
  • Cream cheese: 6 Oz
  • Cilantro: 2 Oz
  • Cumin: 1 teaspoon
  • Cayenne powder: ½ teaspoon
  • Pepper & salt to taste

The Preparation Of The Keto Chicken Soup

  • You require dicing the celery stalks and bell pepper

  • Heat the olive oil at medium temperature

  • Add the celery stalk, bell pepper and the garlic to the oil once it gets heated

  • Cook till the celery turns soft

  • Add pepper and salt

  • Add the tomatoes and keep stirring

  • Add the chicken and broth

  • Cook the mixture for about 3 minutes

  • Add al l the other spices and some additional salt, if needed

  • Stir the mixture well and leave it for 2 minutes

  • Add the chopped cilantro to the mixture

  • Put the soup to boil at reduced temperature.

  • Add the cream cheese and stir till it blends uniformly

  • Let the mixture boil for about 5 minutes

  • Garnish the keto chicken soup with the diced tomatoes and the cilantro leaves
